During my last trip to New Jersey, my girl Natalie told me about a simple way she makes pulled chicken in her crockpot. I’m literally firing my crockpot up weekly these days, so I came home and tried her recipe out right away.
I mentioned on Monday that I’m obsessed with the new Skinnytaste Fast and Slow cookbook. I’ve made so many recipes from it, and my friend Angela and I have been trading reviews back and forth. We haven’t found anything yet that we didn’t love, including this dish!
I’ve been trying to food prep each weekend so that I have side dishes ready to go each week.A few months back, I tried cooking carrots in the crockpot and loved the results! I don’t love raw carrots, but I love them cooked for extended periods like with a roast and roasted until caramelized in the oven.
Preparing for the arrival of Winter Storm Kayla this week, I felt the need to fire up the crockpot. There’s NOTHING like a warm bowl of soup when the snow is falling outside. Best eaten in front of the fireplace, under a blanket with fuzzy socks on.
Sweet potatoes were one of those foods that I decided I didn’t like a long time ago.I’m so glad I came to my senses and tried them again over the past several years. Not only are they a pretty, pretty orange color… but they’re sweet and so dang delicious!

I had coffee with my friend Kris this weekend and she was asking about what kind of veggies I eat on a weekly basis. I explained to her that I’ve been making a big quantity of veggies over the weekend and then eating them throughout the week. Food prep to the max!
