My favorite yoga class is only offered in the summer, and naturally, it’s an outdoor class.When you live in Denver, you spend as much time as possible outdoors in the summer. While it can get extra warm at times, it’s mostly incredible and lovely and too beautiful to waste. Of note, we can spend time outside all year round… but summer will be forever my favorite.
This weekend, I planned an incredible bash for my girlfriends. We’ve been talking about getting together like this for years… and finally the stars aligned. The menu was set, the tarot card reader agreed to come, and I even set up my office for the readings. So excited!
I mentioned my New Year’s Eve weakness a few weeks ago here on the blog, but I didn’t tell you guys all about what I brought to the party! I made, if I might say so, the prettiest veggie tray and a new dip inspired by the Trader Joe’s Reduced Fat Kale and Spinach Dip.
I eat a TON of veggies. My staples are cucumbers, tomatoes, broccoli, beets, and bell peppers (lots of bell peppers lately!!) While I love to cook with them, most days I also eat them raw. They’re a perfect snack in-between calls. Confession: I love them even more with dip.
Back in August, I went to an amazing yoga class at the Botanic Gardens in Denver. What’s more lovely than practicing yoga outdoors, amongst the flowers and with good friends? Pairing that evening with delightful snacks and wine afterward.
I’m definitely going through an Asian food stage. You might have noticed a theme in the recipes I’ve posted… but I can’t get enough of all the delicious Asian flavors. Check out my Asian Chicken Lettuce Wrap Salad and Broccoli Pecan Salad with Mustard Vinaigrette from last week.
