Chicken Gyros

I’ve really fallen in love with The Girl Who Ate Everything‘s blog recently.  She has SO many delicious recipes, and she loves Cafe Rio like I do… Seriously, we’re quite the match!

When I was trying to decide what to whip up for some friends on 4th of July, I quickly found myself on her site and found the PERFECT recipe.

With the fireworks ban and the smokiness that has been Colorado, I knew we’d be dining indoors and it would be a different kind of 4th of July.  So, why not make it tasty and Greek??  And, that’s exactly what it was…

Serves 4


 Chicken Gyros
Tzatziki Sauce: 
1 cup plain Greek yogurt
1 regular cucumber, peeled and seeded
1 teaspoon minced garlic
1 teaspoon white wine vinegar
Salt and pepper
Squeeze of fresh lemon juice
Extra virgin olive oil

For the Chicken:
Juice of 1 lemon (2-3 Tablespoons)
2 teaspoons minced garlic
2 teaspoons red wine vinegar
2 Tablespoons extra virgin olive oil
2 heaping Tablespoons plain Greek yogurt
1 Tablespoon dried oregano
Salt and pepper
1 1/4 lbs. boneless, skinless chicken breasts

Pita bread
Fresh tomatoes, seeded and diced
Red onion, sliced thin

1.  Shred the cucumber or chop in food processor. Wrap in a towel a squeeze to remove as much water as possible.

Use a dish towel to wring out the cucumber. There’s a LOT of liquid that will wring out.

2.  Mix together the yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil.  Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Combine all the ingredients in a bowl and refrigerate

3.  To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a Ziploc bag.

It may have been smarter to whisk the marinade in a bowl and then transfer to a bag, but it worked…

4.  Mix well. Add the chicken pieces and mix well to coat. Cover and refrigerate for about 1 hour.

Marinade the chicken as long as you can. I marinaded for 4 hours and it was delish!

5.  Cook the chicken as desired.

Tip: Spray your grill with Grill Pam so your chicken doesn’t stick. I didn’t, as you can see.

6.  Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes. Cut into strips.

This chicken was SO fragrant and delicious!

7.  Heat pitas. Top with chicken, tzatziki sauce, diced tomatoes and sliced onions. Serve immediately.
